Use of enzymes in food industry
Enzymes from organisms are widely used in food industry. For example:
- A lipase (¯×ªÕžJ) from a species of fungi
can be used as a flavour enhancer in fats, oils and dairy products
such as cheese.
- A mixed carbohydrase (ºÒ¤ô¤Æ¦Xª«žJ) and protease
(³J¥ÕžJ) enzyme product from a species of
bacteria can be used in the preparation of alcoholic drinks, sweets
and sweeteners.
- Milk-clotting enzymes from various micro-organisms can be used
in the production of cheese.

Why are there
no amphibians in the oceans?
Amphibians are covered with naked skin which is differentially permeable.
The salt concentration in their body fluid and blood is much lower
than that in the oceans. If they are put in seawater, water will
leave their body by osmosis due to the difference in water potential,
and they will die of losing water.
